Saccharification studies of crude glucoamylase preparations showed that the action of enzyme extract on raw starch was not significant (22.3%). At 80 Deg.C, a substantial amount of hydrolysis occurred after 72 h of incubation. It was observed that the conversion rate increased to 85% upon acid steeping. Alcoholic fermentation of saccharified wheat starch was also carried out with the ethanol producing yeast Saccharomyces cerevisiae JY. It produced 5.15% (v/v) ethanol in a medium containing 10% starch (saccharified to 8.43% fermentable sugars) at temperature 30 deg. C (pH 5.0). The conversion efficiency was 95.45%.
