Quality test of molasses samples in the 1992/93 sugar season

Molasses samples from 12 Hungarian sugar factories have been tested for general physical, physicochemical and internal quality characteristics.It has been found that the extract content was significantly lower than usual in the majority of the samples. The poorest quality molasses (from Kaposvar) had high invert sugar and unfermentable sugar content. It was dark and its toxicity was exceptionally high (6.2). The amount of assimilable nitrogen was determined with VDH and AOB yeast strains. It has been found that it was highly specific to the yeast. It was 0.6 for VDH yeast, and 0.39 for AOB yeast. In another sample the same numbers were 0.88 and 0.6 respectively. It has been proved in a fermentation test that a supplement of 8 kg MgSO4/1 t of molasses could improve the yield. Hardly any improvement was found when doubling the biotin content of the molasses
