A new wheat scouring system was implemented by the mill of Hajdunanas. The basic concept of the system is that different quality grains need different treatment for optimal milling efficiency. Optimal conditioning before the first break is 8-12 hours by 16-17 o/o water content for hard wheats and 3-6 hours by 14-15.5 o/o water content for soft wheats. In the endosperm of hard wheats the protein is linked strongly to the starch. It is easier to grind and its flour is more granular. The proportion of grits can reach 50 o/o. The flour of soft wheats is finer and sticky, hard to sift. The proportion of grits can be as low as 20 o/o. The mill of Hajdunanas is a highly automated, safe and modern mill where the wheat mixtures are made according to recipes to meet customers needs, and the soft and hard wheats are conditioned separately for optimal results. Different shipments of wheat are stored according to one of six different storage programmes, then they are mixed to create even quality mixtures. Conditioning is done on two parallel lines. One of six computer-controlled programmes can be chosen for conditioning. At the end of the line the wheat is cleaned and wetted
