Quality status of ground roasted peanut sold in markets

Quality status of ground roasted peanut sold in markets was studied. Eight samples of GRP were repeatedly collected every month for 3 months. Average value, color L, a and b were 55.17, 6.77 and 22.62 respectively, the defect was found to be 2.31 %, size could be classified into 6 levels, the remainder on the sieve of 5, 7, 10, 14 and 18 mesh were 8.07, 18.92, 21.45, 14.94 and 14.42 % respectively, the smaller size which pass through the sieve of 18 mesh was 22.20 %, water activity was 0.348, the heavy filth was found to be 0.44 % while the light filth was found in every sample, the value of moisture, protein and fat content were 2.96, 26.05 and 43.74 % respectively, peroxide value was 4.89 mg/kg, aflatoxin was found to be 191.26 ppb., total plate count and yeast and mold were 2.29x10(exp.4) and 1.80x10(exp.3) colony/gm respectively, coliform in MPN/gm was 1.28x10(exp.2), the sensory evaluation for S/I of color, peanut flavor, rancidity, stale, size and defect was 1.045, 0.881, 2.001, 1.872, 1.209 and 2.501 respectively, GRP sold in markets are not qualified for consumption due to high amount of aflatoxin. The sensory qualities for peanut flavor, rancidity, stale, size and defect were different from panel's ideal.
