Microbiological quality of orange juice

Microbiological study was performed on 35 samples of orange juice from Bangkok. The average number of microorganisms was 1.6x10(exp. 3) per ml. (MPN). From the study of morphological and biochemical character of 35 samples, Escherichia coli, Salmonella enteritis, Shigella sonnei, Staphylococcus aureus, and Vibrio cholerae were detected in 12, 2, 3, 6 and 1 samples respectively. Escherichia coli were serologically identified. Antibiotic sensitivity were performed and Escherichia coli, Shigella sonnei, Salmonella enteritis and Vibrio cholerae were sensitive to streptomycin, getamycin, kanamycin, and chloramphenicol while some strain were resistant to ampicillin. Staphylococcus aureus was sensitive to streptomycin, erythromycin, and tetracyclin but resistant to penicillin in some strain. The pH and total sugar of the orange juice varied from 4-5 and 160-305 micro g/ml respectively and the amount of sugar in the orange juices were correlated to the amount of the microorganisms.
