Microbiological quality of ka-nom-chin

Microbiological study was performed on 32 samples of Ka-nom-chin from Bangkok. The average number of the microorganisms was 6.4x10(exp. 7) CFU/gram. Escherichia coli and Staphylococcus aureus were found on 11 and 9 samples respectively. Drug sensitivity test was performed and it was found that E. coli was sensitive to Chloramphynicol and Gentamycin and some isolates could resist Amicillin, Kanamycin and Streptomycin S. aureus was sensitive to Tetracycline and Streptomycin while some isolates could resist Erythromycin, Penicillin and Ampicillin. On the serological identification, were 4,4 and 3 isolates of E. coli polyvalent I, II and III respectively. When Ka-nom-chin was boiled for 2,4 and 6 minutes, the number of the microorganisms was decreased significantly and the average number of the microorganisms in 2, 4 and 6 minutes were 2.04x10(exp. 6), 8.7x10(exp. 4) and 1.18x10(exp. 4) CFU/gram respectively.
