Kinetic behaviour and productivity of immobilized yeast cells in two-layer alginate gel beads

The subject of the present study was ethanol fermentation by Saccharomyces cerevisiae cells immobilized in calcium alginate matrix in the shape of gel beads, containing internal core of entrapped cells, surrounded by an external cell-free layer. Kinetic and yield parameters for glucose conversion to ethanol and inhibition effects of substrate and product on yeast fermentation activity were recorded. Specific ethanol productivity and specific rate of substrate consumption first increased raising the initial glucose concentration up to 150 g/L and upon a further increase in glucose concentration, started to decrease as a consequence of substrate inhibition effects, resulting in a 59 decrease of specific production rate.
