Content of some vitamins in wheat and barley from organic farming

The content of some vitamins in wheat and barley from organic farming according to the conditions of IFOAM (International Federation of Organic Agriculture Movements) was determined and compared with those produced traditionally. The achieved results proved that the content of vitamins could be a good indicator of quality changes of grain from organic farming. Especially, the content of water soluble vitamins, thiamin and riboflavin, follows the growing conditions of grains. In almost all cases the concentration of thiamin and riboflavin in wheat and barley was lower in organic farming samples. Fat soluble vitamins, tocopherols, tocotrienols and carotenoids, were not influenced by farming conditions.
