The effect of different levels of N supply on the development, accumulation and composition of wheat grain proteins was studied during grain filling using classical fractionation and gel electrophoresis. Compared with basic fertilization in autumn, even a single dose of 120 kg/ha N in spring, which resulted in the highest grain protein content, did not increase the non-protein nitrogen content, which made up 29 o/o by full maturity. Reserve proteins made up a decisive (75 o/o) proportion of the increase in total N content caused by N fertilization
