Brown rice may become increasingly accepted as staple food as its nutritional and health values recognized, taste improved, shelf-life extended, and the need for more food intensifies. The present post-harvest system characterized by rough rice storage and milled rice output may need to be re-engineered to suit the near-future demand for brown rice. This paper reviewed studies on brown rice drying, storage, preservation and handling, and high-moisture paddy hulling. These information were integrated to serve as technological bases for quality brown rice processing. A brown rice-based post harvest system and its variants, were also evaluated, and their merits compared with the present milled rice-based system. Technology gaps and equipment needs of the brown rice-based systems were likewise identified
