Food safety is a growing global concern not only for its continuing importance in public health domestically but also because of its impact in international trade. Current emphasis on good manufacturing practices, sanitation and ISO standards have become important in assuring high quality processed foods. With the demand for safer foods as a result of recent well publicised foodborne outbreaks and with the enactment of new agreements through the World Trade Organization (GATT), new approaches such as HACCP have attracted widespread support particularly in industrialized countries. An effective HACCP program requires equally competent technologies to determine and monitor each critical control point. The role of improved microbiological analytical methods and detection systems in effective surveillance and hazard characterization in risk analysis of foods also cannot be overemphasized. This session will examine updated conventional and commercial tests as well as new developments in microbial detection that can be of value in evaluating problems of public health (e.g. street foods) and international trade significance. The presentation will provide an overview of the various methodologies that are currently used for the detection of foodborne pathogen, discuss the rationale for rapid tests, and present new and innovative technologies in pathogen detection and their prospects in food safety applications. Some of the rapid tests include various immunological and nucleic acid-based detection systems. This will also set the tone for more extensive discussion on how the Asia-Pacific region can utilize these technologies or develop new ones to improve monitoring of foodborne pathogens at home and ensure that export food products are safe
