It was proved that nitrogen fertilization caused an increase in prolamin and glutelin content in protein of winter barley grain. At the same time, a slight decrease in nitrogenous nonprotein compounds, albumins, globulins and insoluble protein was observed. Nitrogen fertilization and the factors connected with the year of barley harvest proved to have a significant influence on the content of particular fractions. While the nitrogen doses were being increased, a decrease in exogenous amino acid content and at the same time an increase in endogenous amin acids were observed
