Influence of soluble oxygen volume in fermenting mash on the quality of raw spirit

Results of research on interdependence between aldehydes content in raw spirit and soluble oxygen in mash during alcoholic fermentation. Thermophyle yeast races As4 and D2 were used. Experiments were carried out on microtechnical and productional scale experiment the amount of oxygen at the end of process is 0.13 percent of saturation state what equals to 0.02 mg oxygen per 1 l of mash at the level of aldehydes in raw spirit amounting to 0.1 g per 1 l of 100 percent alcohol. In result of the model research on microtechnical scale it was stated that aeration of mash causes multiple increase of aldehydes content in raw spirit
