Researches concerning correlation between organoleptic qualities and ammonia content of meat with hybrid lambs for meat

Results of trials performed on hybrid male yearlings of 30-40 kg of live weight, studying the influence of hydrolysible NH3 levels, sulphur and intramuscular fatness on the mutton smell are presented. In all variants under study it has been noticed that protein synthesis and consumption are high and NH3 based on aminoacid syntheses are highly intensive, specific to the growing organism. That's why at an early age and a liveweight of 30-40 kg neither excess of NH3 nor glutamine deposits are noticed. The lowest level of NH3 is contained in meat line mutton, a trait which is to be improved by the breeds with which hybridization was performed. The lowest content of protein with sulphur is displayed by the meat of animals from the meat line supporting also the interest exhibited by the consumers for these animal qualities. LC x LC variant has a higher level of covering fatness and, accordingly, a higher level of intramuscular fatness which offers a superior meat quality.
