The investigation was conducted in order to estimate the effect of varying doses of nitrogen (0-200 kg/ha) combined with the constant doses of P2O5 and K2O on the yield and nitrate and nitrite content in cabbage, broccoli and sugar beet. Nitrogen doses of 100 and 200 kg/ha increased the yield of broccoli. The highest average yield of cabbage was achieved with 100 kg N/ha, while the variety Conquest gave the highest yields with 50 kg N/ha. Beetroot gave high yields with 50 kg N/ha, while higher N doses had no effect on yield increase. Increased N doses increased the content of nitrate and nitrite in broccoli. Nitrate content increased in cabbage only after the application of 150 kg N/ha. The increased N doses did not affect the content of nitrates in beetroot, while the content of nitrite increased in Boltardy variety when fertilized with 200 kg of N/ha.
