Quality of milk produced in the Hungarian territory east of the river Tisza

The up-to-date Quality Assurance System means the coordination of technical and economic activities making possible to produce economically goods that meet consumers' demands at the best. The qualification system developed without interruption form the beginning of the 1980s has four categories where milk consignments are assigned considering acid contents, physical purity, total number of germs and somatic cells as well as the quantity of inhibitors. Specified values of quality characteristics call forth price consequences. In this paper we lay particular stress on qualification arranged by the comprehensive survey and by the total number of germs as picked out of among the quality features of crude milk. Figures are provided of the proportional changes of milk consignments failing in various categories. Also the quality of milk produced in smallscale farms was examined and a proposal was made to improve it
