Comparison of offal use and price in Asian countries

Meat price are generally higher in Japan than in other countries. One factor the high price of meat is low offal price. A animal carcass is composed of dressed carcass and meat by-products (for the most part, offal). The purpose of the present study is to clarify the construction of offal price in Japan through the comparison of Japan with other Asian countries. The data in Japan used were collected by Meat News Journal, while those of Asian other countries were collected by Mail survey. The main findings are follows; 1) The offal price is 10-30% of the dressed meat price in Japan as opposed to 50% in Asian countries. 2) The offal price in Japan is less than 1 percent of monthly income per person as opposed to more than 1 percentage in Asian countries. 3) The coefficient of utilization of offal is considerable low in Japan as compared with Asian countries. At present, offal is mostly used fro table purpose only. From now on offal is expected to used as feed, for medical use and for industrial use. Accordingly, the development of offal processing technique is needed
