The methods refers to food industry and may be used for enriching any plant raw material, which at processing is subjected to homogenization and subsequent fermentation, by natural radioprotective substances. Melanines are known to possess radioprotective properties, so the invention is based on the knowledge that increase in their content in food gives them new properties connected with radioprotective action. The technology of enriching food additives by melanines is developed according to which raw material (tubes, roots, fruits and small fruits) are homogenized in a rotor-type hydrodynamic cavitator at 3200-4600 rpm, number of beaters equal 6 and cavitator volume of 150 cub. dm and continuous blowing of raw material with oxygen when processing. The method applied provides producing of food additives enriched with melanins whose introduction into foods protects organism from radiation and the radiation sickness caused by it
