Multi-enzyme corn starch hydrolysis for high maltose yields

By combined action of maltogenic and debranching amylases on corn starch, a hydrolysate of more than 30 maltose, and less than 5 glucose content have been obtained. The processing conditions and variables for such a type of the maltogenic conversion have been investigated and defined. Following the liquefaction and dextrination phases with bacterial alpha-amylases, the intended content of maltodextrins has been obtained. These maltodextrins have been saccharified in further maltogenic reactions. The saccharification of the maltodextrins has been done by combined action of barley beta-amylase, fungal alpha-amylase, and debranching pullulanase. During 40 hours of reaction at defined process conditions, viz. t=55 deg C and pH=5.7, the high maltose starch hydrolysate has been obtained with more than 80 of maltose.
