Lean meat and carcass quality of Estonian Landrace

This research was done in the Animal Breeding Institute of the Estonian Agricultural University from 1994 to 1996. The complex estimation of the offspring of 127 Estonian Landrace boars was carried out evaluating the meat performance and meat quality of 645 pigs in all. The FOM meter and ZP two point method as well as dissection of carcasses were used to measure the lean meat content. At slaughter the live weight of the pigs investigated was from 95 to 105 kg. The meat traits were evaluated by the use of the method of progeny testing. The physical and chemical quality of lean meat was estimated from musculus longissimus dorsi within 48 hours after slaughter. Analysing the results of this research we can state the following: The percentage of carcasses with defective lean meat did not practically change during the test period(in 1994 - 37.6 per cent, in 1996 - 41.4 per cent). The water holding capacity had decreased during the 2 years, the share of low water holding capacity characterized 55 per cent of all the carcasses in 1994, two years later this value rose up to 67.4 per cent
