Effect of nitrogen on the carbohydrate content of grapevine canes

Differences caused by nitrogen were only found in case of some carbohydrate forms, but there was no significant difference in the total amount of the carbohydrates. With increasing fertilizer doses, the starch content of the canes was decreasing and the saccharose content increasing. The glucose and fructose content was not affected by the treatments. During the ripening of the crop, the average carbohydrate content (sum of the glucose, fructose, saccharose and starch forms) of the shoot varied from 11.7 to 12.4, in the cane, from 13.2 to 14.3. The total carbohydrate content had increased by almost 2 from the time of the vintage to December, which is probably due to hemicellulose hydrolysis. Irrespective of the treatments, the amount of the carbohydrates reached and even exceeded 13 , the values, specified by the Hungarian standard, in every case, so on this basis all of them can be considered well ripe
