Study of protein quality and minerals in four lines of pigeon pea (Cajanus cajan) grown in Sudan [Sudan]

The proximate analysis of four lines of pigeon pea showed that moisture content ranged from 4.50 to6.25 protein content ranged from 21.24 to 23.75 fat content ranged from 1.37 to 1.72 crude fibre content ranged from 8.59 to 11.63 ash content ranged from 4.67 to 4.95 and carbohydrate content ranged from 54.64 to58.21. Protein solubility fracions for these lines showed values for the albumin fracion ranging from 63.54 to 66.41 for the globulin fracttion ranging from 5.84 to 6.38 for the prolamin fraction ranging from 1.95 to 2.68 for the glutelin fraction ranging from 10.75 to 14.25 and for the insoluble residue ranging from 9.50 to 9.58. All electrophoretic separations of the salt soluble protein fractions for the four lines of pigeon pea gave eight bands, three of which were major with approximate molecular weights 66.200, 46.000 and 45.000 dalton. Tannin content for these lines showed values ranging from 0.02 to 0.06. In vitro protein digestibility for the same lines showed values ranging from 26.40 to 69.64. Phytic acid content for these lines of pigeon pea showed values ranging from 0.10 to0.19. Mineral content of four lines of pigeon pea showed that the calcium content ranged from 0.10 to 0.24, magnesium content ranged from 0.06 to 0.12, potassium content ranged from 0.03 to 1.66 sodium content ranged from 0.03 to 1.60 and phosphorus content ranged from 0.40 to 0.60
