Meat colour as the indicator of domestic animal meat quality and the possibility for colour determination using the contemporary systems (Cielab, Anlab, Hunter, Cie, Psychometrical val.)

As visual properties of meat are dominant factors in consumer choice and as they are also an important indicator of meat quality, it is of great interest to introduce a simple and competent colour measurement with sensory evaluation. The muscles (M.deltoideus, M.l.dorsi, M.semimembranosus) of domestic swine (Belg.landrace, 6 months), muscles (M.L.dorsi) of cattle (Simental, 18 months) and muscles (M.pectoralis superficialis and M.sartorius) of domestic poultry (New-Hampshire lens, 12 months, and hybrid turkeys, 18 weeks) were investigated. The visual colour impression accords with the amount of total pigments and with colour measures in some of the systems (CIE, CIELAB, ANLAB, Hunter) obtained with a MOMColor 100 unit. This way quantification renders competent and reliable results that can be introduced in quality standardization of some kinds of meat
