Variability of meat colour indicators of fattening Holstein bullocks

The effect of increasing carcass weight (CW), daily gain (DG) and age at slaughter (AS) on the percent of remission (REM), amount of myoglobin (MYO) and content of collagenous proteins in muscles (KOB) was studied in 92 stanchionless housed Holstein male calves slaughtered at 171-250 kg CW and fattened with a highly concentrated diet based on crushed wheat and barley (1:1) with a protein-mineral concentrate and hay (14.95 % dry matter of feed ration). With increasing CW the REM % decreased insignificantly and the amount of MYO (min. 265, max.380 mg/100g) increased highly significantly, KOB increased slightly and non-systematically. With higher DG the REM increased insignificantly, MYO and KOB slightly and insignificantly. The % of KOB was significantly the lowest in the youngest animals (i.e. 0.87 %)
