Tartaric acid - preparation and application in the food industry

The paper contains a survey of available knowledge on tartaric acid application in industrial production. Tartaric acid is used mainly in the food industry (in effervescent beverages, in baking and jelly powders) and in medicine. Possibilities of preparing tartaric acid are presented. The chemical method - isolation from wine stone - represents the most common way. Conversion of 5-oxogluconic acid or of epoxysuccinic acid is the basis of a fermentative method of production
