Qualitative and technological parameters of milk and dairy products from specialized sheep breeds

The objective of the present study was to determine the quantitative and qualitative parameters of milk and sheep cheese (brynza) from part of the genotypes created in view of their use in future breeding programs. The trial animals used in the study were synthetic dairy genotypes of East Friesian, Avassi and Pleven Blackhead breeds and ewes resulting from pure breeding of the crosses obtained. The half-blood ewe crosses between East-Friesian and semi-fine Fleece featured the highest average daily milk yield during the lactation period. However, they had the lowest value for fatty substance percentage of milk. The synthetic genotypes, product of pure breeding of the crosses, satisfied all the breeding requirements for the quantitative and technological parameters of milk. The white brine cheese (brynza) made from milk all the genotypes studied, excelled the requirements of the Bulgarian State Standards.
