Copper, lead and cadmium contents in wine depending upon wine making and wine fining

Our interests were directed to heavy metals sources in vineyard and winery. Influence of must cleaning, alcoholic fermentation and wine fining was investigated. If grape must is cleaned before fermentation heavy metals content in wine will be less. During alcoholic fermentation quantity of heavy metals decreased, copper for 80, lead for 64 and cadmium for 97. Reduction of copper after wine clarifying with egg white, gelatin and tannin and with bentonite was important. Gelatin and egg white eliminated a certain quantity of lead from the wine. Bentonite, milk without fat, wheaten bran increased quantity of lead in the wine.
