Thermostability of Listeria monocytogenes in milk I. Mathematical modeling the death and sublethal injuries at different temperatures

The aim of this study was to examine the thermoresistance of five L. monocytogenes strains to 55, 60, 63, 65, 68 and 70 degree C in skim milk,. Values of F, D and Zd were determined and the kinetics of the death and sublethal injuries of the microorganisms were fillowed up, Changes in the temperature regimen with 5, 6 top 6.4 degree C are needed for the strains to pass over one logarithmic cycle. The results of the study indicate that L. monocytogenes strains do not survive the pasteurization regimens applied in Bulgaria.
