Loss assessment in processing cassava into gari

Experiments were conducted to quantify losses in processing cassava into gari. Average loss of 5% of cassava occurred at the peeling stage. Grating process recorded an average loss ranging from 3 to 8%. Highest lossof 8% occurred at the local centre as against 3.8% in themodern centre where improved machines were used. Losses at he pulping stage ranged from 3 to 5%. Sifting process losses ranged from 3 to 4% for modern centres and between 4 to 5% for local cassava processing centres. Total average loss in gari processing for modern centres was 17% while that for local centres was 23%. Garification rate of 0.66 and 0.57 was established for the modern and local processing centres respectively.
