The trials were carried out in soddy gleyic sandy medium loam soil. The days from transplanting to 50 of heads were cut, curd weight and diameter, contents of nitrates, vitamine C, water-soluble dry matter, total sugar and chloprophyll were studied in 16 broccoli varieties and hybrids. The curd weight in broccoli was fluctuating from 100 g (GEM F1) to 330 g (Platini F1). The lowest nitrate contents were in Early Waltham and Retardo F1 - 82.3 and 86.5 mg/kg. The highest vitamine C contents were in Futura F1 and Tonus. The highest total content of sugar was in Green Belt F1 - 2.73, and the lowest one was in Tonus - 1.16. Chlorophylls were most abundant in Skiff F1, GEM F1, and Sumosun F1 - 0.65, 0.64 and 0.6 mg/g.
