The biochemistry analysis of the technological quality of Triticum spelta L. wheat grain

The quantitative and qualitative composition of high molecular weight glutenin subunits was studied by a analysing grains of three observed and three standard cultivars of winter wheat Triticum spelta L., Baulander Spelz, Rouquin and Schwabenkom and one reference and one standard reference cultivar of winter wheat Triticum aestivum L., cv. Vlada. Recommended by the international organisation ISTA the standard vertical discontinual electrophoresis in the polyacrylamide gel in the presence of SDS, followed by densitometric detection was implemented. The amount of HMW glutenin subunits was determined and the value of Glu-score was calculated. It was found that none of the cultivars observed was identical with its competent standard cultivar in terms of this parameters. Cultivar Baulander Spelz and Rouquin are not homogenous. Cultivar Baulander Spelz and Rouquin consists of three goups of electrophoretic profiles, respectivelly. In all cultivars of winter wheat Triticum spelta L., quantitative determination of average relative percentage amount of HMW glutenin subunits and other electrophoretically divided subunits revealed lower content of HMW glutenin subunits and higher content of other subunits in comparison to winter wheat, cv.
