Some factors affecting autolysis and enzyme hydrolysis of black tiger prawn heads were studied i.e., temperature, time and enzyme concentration. The optimal conditions for autolysis at pH 6.8-7.0 were at 60 deg C for 4.5 hours. The optimal conditions for pepsin hydrolysis at pH 2.0 were at 37 deg C for 6.0 hours with enzyme concentration of 0.7 percent. The optimal conditions for papain at pH 6.5 were at 60 deg C for 4.5 hours with enzym6 concentration of 0.7 percent. For bromelain, the optimal conditions at pH 5.0 were at 60 deg C for 1.5 hours and at enzyme concentration of 0.7 percent. The soluble protein in the hydrolysate from autolysis, pepsin, papain and bromelain hydrolyzation were 8.62, 10.62, 9.05 and 9.71 mg/ml, respectively. According to the soluble protein obtained, hydrolyzation by pepsin was the most effective and was used in further study. Pepsin hydrolysate was spray dried. The proximate compositions of dried hydrolysate were 34.37 percent protein, 0.21 percent fat, 4.43 percent moisture content, 41.34 percent ash and 16.77 percent sodium chloride. The amino acid composition of the dried hydrolysate comprised 18 amino acids, The dried hydrolysate was as good as the commercial peptone in supporting growth fo bacteria. The production yield was 6.71 percent of the raw material used.
