In order to better understanding changes that occur in garlic during storage, we designet a methodology to study the morphological and biochemical characteristics of four autumn and one spring garlic ecotypes from Vojvodina (Serbia, Yugoslavia) as well as one spring ecotype from Kosovo (Serbia, Yugoslavia). At technological maturity, the following morphological characters of the bulb were studied: bulb mass, mass of edible portion of the bulb, clove mass, clove numbers, number and colour of the bulb's protective leaves, and bulb mass. The biochemical properties measured were as follows: dry matter content, total soluble protein content, total reducing sugar content, and ascorbic acid content. During storage, we studied changes in the morphological (bulb mass losses, bolting, rotting of the bulb) and biochemical (dry matter content, total soluble protein content, total reducing sugar content, and ascorbic acid (vitamin C)) content) characteristics of the garlic bulb.
