An industrial dairy plant model was developed having the capacity for processing 100,000 liters of milk per day in a single shift. The model was based on the linear programming method. According to the results obtained and considering input-output relationships the conclusion emerges that dairy and fermented products were far more competitive if compared with milk and cheese. Additional simulation offered another six solutions reflecting the most favourable production structure under the conditions when the dairy plant was obliged to produce certain products or had restrictions with respect to the marketingof its by-products. Business results of the dairy plant tended to decline substabtially by improsing compulsory requirements with respect to the processing of milk for its consumption. On the other hand the business result was not affected by improsing compulsory for cheese production. In addition, the dairy plant business result was not affected by the current treatment of by-products (buttermilk and whey).
