Sugar beet is sown in Morocco in autumn and the harvest occurs end of May to end of July and coincides with summer heats (30 to 40¦C). Sugar beet of the north-western region is characterized by low sugar content (15.6-16/) and high Na, K and invert sugar (35, 39 and 8 mmol per 100¦ S). These concentrations, more important at the end of the season, are higher than the European mean values but are comparable to those from southern Spain. The purity of molasses is low (56/ in average) and remains overestimated by empirical formulas (Schneider, Pollach..). The extractible sugar is still estimated assuming that losses total 3/. This report gives the evolution along the processing season of the technical quality of cossettes and corresponding thick juice, thin juice, syrups and molasses. The estimation of extractible sugar from the analysis of sugar beet using several empirical formulas elaborated in other countries has been tried and the results reported.
