Genetic improvement of the nutritional and technological value of the pea seed and its stability is of major relevance for the economical development of the pea crop. The protein content and composition is one of the major component determining this value. This research aimed at better understand the genetic control of protein storage with the idea in mind of breeding pea for improving their value. We present, in this paper, the great complexity of pea proteins, which consist in a great chemical composition of each fraction which compose the pea proteins, and also, the different breeding strategy chosen by breeders to improve this character
