The winged bean is one of tropical plants belongs to the Leguminosae family with high protein content in seeds. This plant had been known by farmer in Indonesia, but did not cultivate intensively yet. Establishment the correct harvest time is one method to maintain the seed quality. The seed quality was studied in this experiment were dry weight and the protein content in winged bean seeds. This experiment was carried out to know the influence of 8 levels pod age (4-11 weeks after anthesis) on seed quality. The results of this experiment indicated that the highest dry weight was 36.35 g per 100 seeds were obtained from pods with 9 weeks in age after anthesis. While the highest protein content in seeds was 39.02 percent gamed from pods with 10 weeks in age after anthesis. Based on seed dry weight, moisture content and protein content in seeds therefore could be concluded that the correct harvest time of winged bean was 9 to 10 weeks in pods age after anthesis
