[The content of gluten and aminoacids in rye grain]

The aim of the research was to reveal the tendencies of gluten and aminoacids accumulation in rye grain of different grades grown under different soil-climatic conditions. In the period of 1996-1999 the content of albumen and aminoacids was determined in some diploid and tetraploid varieties of rye in different regions of the Belarus Republic. The interdependence of the variety and the albumen content in rye grain was noticed. The influence of the variety and the growing region on the albumen content in rye grain was determined and is shown in a table. The content of aminoacids in rye grain of different countries (Canada, England, Poland, Belarus) is presented in a table.
