Representation of fatty acids and cholesterol content in intramuscular fat of slaughter bulls of Slovak Pied, Braunvieh and Piemont breeds

The authors studied the content of cholesterol and spectrum of fatty acids in the intramuscular fat of m.longissimus thoracis during a comparative experiment with staughter bulls of Slovak Pied, Braunvieh and Piemont breeds. We calculated also the index of unsaturation of fat (I2) and index of nutritive value of fat (I2). The determined fatty acids were of the order C12:0- C22:0, with the highest representation of oleic, palmitic and stearic acids. The linoleic and linolenic acids were present from the essential fatty acids. The average content of saturated fatty acids was in individual breeds within the span 50.55 - 52.40%, index of unsaturation of fat was on the level 0.883 - 0.950, and index of nutritional value of fat 0.070 - 0.080. The average content of cholesterol ranged from 84.50 - 101.57 mg/100 g, and it was the highest in the Braunvich breed. The effect of genotype on unsaturation of intramuscular fat and on its nutritive value did not manifest itself more markedly
