Micrococcus varians is a nitrate reducing bacteria which needs glucose as acarbon substrate for cell growth and its activity. Therefore, glucose was used for kinetics study in the model system. For this experiment, glucose was varied as studied factor to 0.22-0.40 percent for M. varians at 48 hours of fermentation period. The maximum specific growth rate (micro m) of M. varians was 0.2534 /hr and saturation constant (Ks) was about 0.1799 percent. However, M. varians can produce a few of lactic acid content. As a result of this, the pH was also higher. In the nitrate reduction activity, it can reduce nitrate to nitrite with amount of 80 percent in the first period of 12-18 hours. But the reduction of nitrate was dependent upon the nitrate level in the system.
