Equilibrium moisture content isotherms of corn and soybean were determined using a dynamic method. The method involved the indirect measurement of water vapor pressure exerted by grain samples of known moisture contents. The equilibrium relative humidities were measured at temperatures 30, 40 and 50 deg C using test samples with moisture contents in the range of 4 to 33 % wet basis. The equilibrium moisture contents of soybean were also measured using the static method. The effect of initial moisture content on equilibrium moisture content was studied for soybean at 30 deg C. Five different equations namely, Henderson equation, Chung-Pfost equation, Halsey equation, Oswin equation and Sehgal equation were used to represent the experimental data. The Oswin equation and the Halsey equation were found to provide best fit to the experimental data for corn and soybean respectively. A comparison of the developed EMC equations with the published data revealed a close agreement in general, and possibly a better approximations of EMCs in higher moisture content range.
