Comparison between quality and consumer preference of different baby corn varieties in canning

Thirteen varieties of baby corn which were experimental planted at Kasetsart University, Kampangsaen Campus, were canned. The canned samples were tested for qualities and consumer preference in texture, color, odor and taste. When compared to other varieties, Thai super sweet comp no.1 DMR baby corn which is the super sweet and open-pollination variety with more than 80 % resistance to the downy mildew disease had low decreasing in % TSS during canning process, and got the highest preference scores in texture, odor, color and taste. These are due to its sweetness, beautiful yellow color and other good appearance.
