[Cryoprotection complex for vegetable raw material in cold preservation]

The study is aimed at working out measures on cryoprotection of plant products (quince, strawberry, plums and tomatoes) under cold preservation and frozen food storage. Cryoprotection compositions are obtained. A new technology of producing frozen plant products is developed. Effect of cryoprotective treatment on frozen products' structural, mechanic and chemical indices is determined. A possible mechanism of crioprotection is suggested
