Fatty acid content of sheep milk from South-Bulgarian Corriedale and their crosses in production of cheese

Study was carried out with two groups of South-Bulgarian Corriedale (SBC) and their half-bred crosses with local Maritsa sheep.Two batches of white brined cheese were produced.Fatty acid content of milk and cheese (fresh and mature) was determined.Milk of SBC contained higher of saturated fatty acids (69.19%) compared to that of crosses (68.51%).More considerable differences in separate amino acids were observed during production and maturation of cheese.Quantity of saturated and shortchain fatty acids has increased and that of non-saturated and short chain - decreased in mature cheese compared to content of those in the initial milk.
