Reliability of lean meat content estimation in pig carcasses

Data from 76 pigs equally represented by gilts and barrows were analyzed with the aim of verifying current regression equations used for the lean content determination in pig carcasses. The first regression equation RG1 is designed for the apparatus classification, the second one RG2 is used for the two-point method. Average lean contents determined using the dissection, RG1 and RG2 were 53.82 +/- 0.522; 53.671 +/- 0.534 and 54.07 +/- 0.526 %, respectively. Correlation coefficients between the lean contents obtained from the dissections and those determined by RG1 and RG2 were r=0.83 and r=0.85, respectively. These results support a high declarative ability of the regression equations used for lean content determination in pig carcasses. Furthermore high correlation coefficients between the lean content and the proportion of main meat parts (r=0.85) and ham proportion (r=0.84) were found.
