Honey is a natural saccharide product containing a number of dietetically valuable components. Its quality is assessed in terms of physical and chemical characteristics which allow the classification into groups and detection of adulteration or impairment of the dietetic value. Czech and European laws regulating quality characteristics of honey are compared. It is expected that the amended EU Regulation and Codex Alimentarius, which are being prepared currently, will extend the number of characteristics to be tested. The current Czech regulations are strict enough to meet the expected requirements of the amended documents.
