Shell eggs and products utilization in the food processing industry

Eggs consumption per capita in Japan, 1996 was 335 and which was one of the largest consumption country in the world. However, the form of consumption has not clear at present. One of estimation on home consumption was 55% of the total egg consumption. The residual is for food processing and service industries. Purpose of the study is clarify the amount of egg usage both shell and egg products for food processing industry and to clarify an actual conditions of egg buying, processing and shell and eggs on food processing industry. In order to do this, governmental production and consumption's data on food products were used and estimated the eggs used on food processing industry (FPI) and about 50 companies survey were done in this study
