The conductivity of honey and the coherence of other parameters

The physico-chemical parameters of 14 honey samples from different regions of Latvia as well as from Denmark and Germany have been analysed. The electroconductivity, pH and the refractivity of the honey samples and the lincage coherence of the parameters in honey have been determined. The resulting data have been analysed by statistical methods (regression and correlation). It has been found that honey conductivity depends on its ash content and its pH as well as on some other parameters. The influence of the organic acids on the honey pH is rather insignificant. The influence of other factors must be studied.
