Different ways of technological processing of potatoes usage needs a lot of qualitative material which satisfy nutrition and technological requirements. Potatoes like a part of human diet have a convenient material composition. The range of food industry processing is very wide. At the current time the first place has the processing of semi-products. We examined important nutrition and technological parameters of individual varieties of consuming potatoes during the storing in our experiment
