Quality control of cold-pressed oils

Detailed analyses of sensory, chemical and nutritive quality as well as stability were performed in different samples of cold pressed e.g. edible nonrefined oils. The quality of this category of edible oils is varying and the possibility for establishing the authenticity of these products was analyzed. The most important moments for providing better quality and improving the nutritive value, during production of these oils, were also emphasized.
